Five-color ‘hu tieu’: New twist on traditional noodle in southern Vietnam
Hu tieu (rice noodles) have long been a must-try dish on any visit to Vietnam’s Mekong Delta, but the five-colored hu tieu in Can Tho City offers visitors a fun twist on the long-standing local specialty. The Cai Rang floating market is one of Can Tho’s most popular tourist attractions, and those who choose to take a boat ride through Cai Rang rarely pass up the opportunity to try the hu tieu sold by Huynh Huu Hoai (Sau Hoai) and his family on the banks of the Rau Ram Canal in the city’s An Binh Ward. What makes Sau Hoai’s hu tieu so popular is his family's unique takes on the dish -- a pizza-inspired version and naturally-dyed one featuring five vibrant colors. Sau Hoai leads three generations of family members each day as they produce hu tieu for hungry tourists and locals alike. Each and every noodle thread produced by Sau Hoai and his family is handmade and sun-dried until their texture reaches the perfect balance of soft and chewy. Analysis: As wheat prices soar, the world’s consumers vote with their feet
Global wheat consumption is headed for its biggest annual decline in decades as record inflation forces consumers and companies to use less and replace the grain with cheaper alternatives, amid growing food insecurity. Consumers may face even higher wheat prices in the second half of 2022 as importers, who until now have supplied cargoes bought several months earlier at cheaper prices, pass on the costs from when wheat prices scaled decade highs in May. Global wheat consumption in July-December could drop by 5%-8% from a year ago, analysts, traders and millers say, much faster than the U.S. Department of Agriculture's forecast 1% contraction. "There is going to be a drop in wheat demand for animal feed in Europe and China. Wheat demand for human consumption has also slowed in key importing countries around the world," said Erin Collier, an economist at UN's Food and Agriculture Organisation. "High prices have raised food security worries in parts of Asia and Africa where … [Read more...] about Analysis: As wheat prices soar, the world’s consumers vote with their feet

Vong Village’s green sticky rice – a special gift from Ha Noi
"Com" is a special gift from the soil made by hard-working peasants, holding a simple and fresh fragrance. "Com" is often eaten by hand, directly from the lotus leaves, a pinch at a time and chewed slowly to fully appreciate the flavour. It can also be eaten with persimmons or bananas or used as the ingredient for "banh com" (com cake), "che com" (sugary soup with com), "cha com" (pie made of pork and com) among which, "banh com" is the most well-known as it is used at almost every engagement ceremony. The cakes are wrapped with bananas leaves into squares, tied with a red string and stamped on the outside with a Chinese character meaning "double happiness". With these characteristics, "banh com" is believed to be a symbol of steadfast and eternal love. To those who have ever been involved in farming, eating "com" often reminds them of a fresh and fragrant paddy.
